After carefully selecting the green mangoes from local farms, they are expertly cut away from the pits. Unlike other methods that leave mango pieces with pits and packed in plastic containers, resulting in a messy, oily storage situation, our process is meticulous and precise.

Our factory operates with two groups of 120 skilled workers, who rotate between day and night shifts. The cut mangoes undergo a thorough screening process under ultraviolet light to detect any remaining pit fragments.

The journey of the cut mango pieces continues as they move along a conveyor belt, where they are infused with our unique blend of spices and salt. They are then placed in double-layered 200L drums to rest for two weeks. This resting period allows the flavors to melt together, resulting in an exceptional taste.

After the two-week resting period, the mango pieces are transferred to the can filling station. Here, the cans are filled with mango pieces and vegetable oil before being sealed. The sealed cans then undergo a "Hotpack system," where they are immersed in 80-degree bath water for 15 minutes. Following this, they are transferred to a cold bath for 20 minutes to cool down and create a vacuum seal inside the can. This process ensures that no preservatives are needed in our Atchar product.
